Recipe: Roasted Peach Parfaits

Meal time: Great for breakfast or an early snack.

Healthy tip: The greek yoghurt replaces the cream in this recipe. Greek yoghurt contains plenty of probiotics, is low in carbohydrates and sugar and is a fantastic source of protein. Probiotic’s help strengthen the immune system.

ROASTED PEACH PARFAITS (makes 4 parfaits)

  • 4 x large fresh peaches
  • 2 x teaspoons granulated sugar
  • 1 x pinch of salt
  • 2 x cups plain greek yogurt
  • 2 x tablespoons honey
  • 1/2 x cup granola

1. Preheat oven to 425°F. Slice peaches into large bite size pieces. Place on a baking sheet covered in parchment paper and sprinkle with sugar and salt. Place in the oven and roast for 20 to 25 minutes until the peaches caramelize and lose their juices. Pour the peaches with juice in a bowl.

2. While the peaches are roasting, mix to combine the honey and yogurt in a bowl.

3. In 8 ounce glasses or parfait cups, assemble the parfaits by adding a layer of yogurt to the bottom of the glass. Next, add a few spoonfuls of the peaches on top of the yogurt and then add a spoonful of granola on top of the peaches. Repeat layers until the serving glasses are full. Top the parfaits with a spoonful of peaches and a sprinkle of granola. Serve chilled and enjoy!
