With the weather warming up we’re craving salad here at Sporteluxe HQ. Which is why we’re loving David Bez’s new cookbook Salad Love (Quadrille; $29.95). It is full of 260 clever salad combos – one for every weekday of the year! This cottage cheese, peas and cucumber combo is one of them.
Cottage cheese, peas and cucumber salad
Ingredients
For the salad
50 g rocket and baby watercress
50 g pre-steamed peas
50 g cucumber, chopped
50 g cottage cheese
2 spring onions, finely chopped
For the dressing
1 tbsp extra virgin olive oil
1 tsp cider vinegar
Pinch of salt and pepper
Method
- Mix dressing ingredients. Set aside
- Combine salad ingredients. Toss together. Drizzle with dressing and serve.
